It’s the middle of July, summer is in full swing and days are being spent by the pool with food being served off the barbecue.
While our summer days might be short lived the cold beverages and chilled treats are extra tasty when it’s warm. Like these watermelon bites. Watermelon screams summer, does it not?!
Paired with the crisp bite of a cucumber, the refreshing taste of mint along with the blueberry goat cheese...oh my. It’s like everything that tastes just like summer in one little bite.
While the blueberry goat cheese is not necessary, you can totally eliminate it if you have a dairy intolerance or are vegan BUT if you’re not vegan and love goat cheese then you absolutely NEED to give this a try. If cheese not you thing then simply omit the goat cheese OR if you’re feeling ambitious whip up some vegan blueberry “cheese” of your own.
To be honest, I sampled more than just a bite. I couldn’t stop myself. They were refreshing. They were fabulous. They were like a sweet summer party in my mouth.
Watermelon, Cucumber & Blueberry Goat Cheese Bites
RECIPE
Ingredients:
1lb watermelon, diced uniformly
1 European cucumber, sliced into discs
1 4oz log of blueberry goat cheese, cut into small cubes (optional)
1 bunch fresh mint leaves
Directions:
Assemble by plating cucumber, watermelon then goat cheese and mint on top.
Secure bites with a toothpick
Serve chilled.
Serves 24 bites.
