I have never thought about a “killer” vegetable soup, but sometimes that is just what happens when you add in special ingredients.
Today, I am going to give you a basic vegetable soup that my family likes and the “killer” part we add to make a new soup. And this can be done in about thirty minutes. A “killer” recipe in a “crazy” short time. So, let’s get to it.
Ingredients
- 4 cups Water
- 4 vegetable bouillon cubes (Knorr makes some good ones)
- 2-3 medium potatoes, cubed (I do not peel them)
- 1 large carrot, chopped
- 1 stalk celery, chopped
- ¼ red pepper, chopped
- ½ onion, chopped
- 2 Tbs butter
- 2 Tbs flour
- Olive oil
- Salt
- Pepper
- Oregano or rosemary
- Parsley
- Put potatoes and carrots with salt, pepper and oregano in the oven in shallow baking pan for about 20 minutes on 400
- In soup pot, melt butter. Add onion, red pepper and celery. Fry 5 minutes until soft
- Add flour and mix until smooth. Add water and stir. Add bouillon and mix.
- Check potatoes, they should be soft as well as carrots. Mix to the soup. I add olive oil and all.
- Add the seasonings to taste. (Others can be used)
This soup is ready to eat for only $.42 a serving. You could change the vegetables to anything you have leftover from this week’s meals like broccoli, zucchini, spinach, or corn. Peas work nicely too.
Now for about $.65 extra per serving, or $1.07 a bowl, you could add to this base:
- 2 ½ c milk
- 2 bouillon cubes
- 1 brick shredded cheddar
- ½ brick Swiss, shredded
Add the milk to the base soup and let it heat. Then add the bouillon and cheese stirring until it all melts. And this is the “killer” vegetable soup my family frequently asks for. I never thought someone could get excited over vegetable soup, but here we are.

You could take it a step further and add dumplings to the mix. Mix 2 cups Bisquick mix to 2/3 milk and drop round spoonfuls on top of soup. Simmer for 15 minutes and you have a very hearty meal. The possibilities are endless!
