Let’s face it, we all enjoy “breakfast for dinner” every once in a while. Pancakes are a great option costing only about a quarter a serving, but sometimes something a bit more hardy is necessary to get through, especially for those who have to work on Saturday morning.
That is why the Southwestern Breakfast is on the list of Friday night Lent meals.
Ingredients
- 3-4 potatoes, cut into small cubes
- 2-3 mushrooms, chopped
- ¼ red pepper, chopped
- ½ small onion, chopped
- 2 Tbs butter
- 4-6 eggs
- Olive oil
- Pepper
- Oregano
- Garlic powder
- Salt
First cover the bottom of a small pan with olive oil. Add potatoes, garlic, and oregano to it and pop in the oven for about 20 minutes.
In a frying pan with melted butter, add onions, peppers, and mushrooms. Fry until soft. Set aside.
I fry 2 eggs over easy in a greased pan per person.
Then you put it together- potatoes, vegetables, then eggs on top.
Of course, I like to add a little shredded cheese to mine. Others like a dollop of sour cream on the side or spiced up with a sprinkling of hot sauce.
The vegetables are interchangeable. You can add corn, scallions, or grated carrots. Many times, I will just use whatever is leftover in the fridge. Pretty much whatever you have, will work for this.
The nutrition varies a bit depending on what you put into it, but eggs, being on the ‘yes’ list for Lent, offers 7 grams of protein each, while potatoes offer 40% more potassium than a banana for the heart-conscious eater.
The cost? Roughly a $1 a serving. Simple and delicious- that is what my family loves about this quick and easy meal.
